Recipe of the month: Colourful black bean salad
I made this recipe for a get-together and it was a hit for both adult and children. Why not give it try this Christmas?
Serve: 6
Preparation time: 30 minutes
Ingredients:
200g black beans (dried) or 2 cans of drained black beans
1 cup of frozen corn, boiled
1 avocado, peeled and diced
2 ripe tomato, diced
Half a spanish onion, diced finely
1/2 cup of slivered almond, toasted
Zest and juice of one lime
2 tablespoons of extra virgin olive oil
One clove of garlic, crushed
Method:
1. Soak and boil black beans in a large pot with water until soft. (I used a pressure cooker).
2. Mix all ingredients in a large serving bowl. Season with pepper if desired.
